Odds & Ends Fritatta

6 eggs, beaten
2 ounce-ish Monterey Jack cheese diced small
1/2 teaspoon black pepper
Pinch salt
1 teaspoon butter or olive oil

2-3 slices of cooked bacon, chopped
1/2 cup chopped red pepper
1/2 cup chopped scallions
4 sprigs chopped cilantro or parsley leaves

Preheat your oven to broil.

Mix eggs, green pieces of the scallions, pepper, and salt. Heat up an oven safe saute pan over medium high heat adding oil or butter to warm.  Saute the red pepper and whites of the chopped scallions adding the chopped bacon when the vegetables have begun to soften slightly. Pour egg mixture into pan and stir lightly with a heat resistant spatula, then leave alone and sprinkle in the Monterey Jack cheese. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with the cilantro or parsley. For other great combinations try these.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and a bit puffed up. Remove from pan and cut into 6 servings. Serve right away.  Or even a little later.
