Soup’s On

Spring cold snaps bum me out.  Droopy daffodils, brown magnolia trees and down coats out of storage.  Ugh.  Since the bottom of my vegetable drawer looks a little like my daffodils-sad and droopy, it’s time to make soup.  Making soup is one of the best ways I know of, to reduce home food waste and create a delicious, wholesome meal.  Soup can be so inexpensive and full of nutrition. Soup can include meat or be totally vegan and be equally filling and delicious.  I have some badly wilted snow peas and white-ish baby carrots (left over from a play date snack) that need to be dealt with so they are going in.  My basic and highly customizable recipe is below.  Dig out your soggies and make a comforting bowl for yourself.
