6 eggs, beaten 2 ounce-ish Monterey Jack cheese diced small 1/2 teaspoon black pepper Pinch salt 1 teaspoon butter or olive oil 2-3 slices of cooked bacon, chopped 1/2 cup chopped red pepper 1/2 cup chopped scallions 4 sprigs chopped cilantro or parsley leaves Preheat your oven to broil.
